Álvaro Sanz Clavijo (Madrid 1983) was fortunate enough to study cooking at fifteen years old with his great teacher, Salvador Gallego (Michelin *). After taking his first steps at the cooking school, he set out to explore the world, going from restaurant to restaurant.

After this long journey, he arrived in Ibiza and was captivated by the island’s light, magic and nature. It is here where he met Antonio Gallart, a hospitality entrepreneur with a prominent career on the island.
Together they embarked on an adventure with the clear objective of creating and offering a new, excellence-based gastronomic space, working with passion and a determination to improve day by day.
